I know you probably have some pretty good local companies but I recommend either Strange or Mark Williams. Aluminum is light and carbon fiber is the lightest but chromoly will most likely last the longest and is the most forgiving. A lot of people will probably have different opinions but these are just from my experiences from running all three materials.

I've heard nothing but good from this company. I run a Strange because I have never heard anything bad from them either and the rest of our driveline components came from them too.

Their 3" Nitrous Ready shaft is what I run in my truck.
They build a quality unit.

How long is the driveshaft you need?
I have the old one out of my car, it's a C6 yoke, big 1330 solid spicer joints, about 56" IIRC.
I say it was old, but I had just had it made a couple of years ago, and last year it went back in for a slight shorten and rebalance. Looks like new.

There is a driveline shop in OKC I use, they do a lot of big truck stuff, and even dragcar shafts. 3.5" with the good ends, solid 1350 joints cost me like 200 bucks, and have been yet to break it.
I asked how much it was good for, he said it would laugh at 1500hp.....................

Jon, I just had a 3.5" 1350 deal built for about the same price, and told the guy I was gonna throw 1000 HP at it sooner or later. He said no problem....without blinking an eye!

For a simple mild steel driveshaft most any local place should be able to handle making one for you. For a racing 'moly, aluminum, or carbon fiber shaft you might try Mark Williams, Strange, or PST.

On a friend's car I swapped from a 'moly shaft to a PST carbon fiber driveshaft, it has held up well so far. But since his car is under 2500lbs it's not a real harsh test since it's not being smacked anywhere near as hard as a driveshaft would be in a heavier car (or a car with more power).
But considering the price of a carbon shaft, in a lot of cases for the money 'moly is hard to beat.
