I wonder if any of the assorted rear coil spring types/sizes used for dirt/circle track cars could be made to work.

The 62 Fords (full-size) were all leaf spring cars. 65's were coil rears the same as the 66's Are you doing a coil spring conversion of some sort or is this a typo on the year ??

Well, now that you mention it, the rear end might not be stock. The car has leaf springs and one shock and spring which is on the drivers side. Don't ask me why, I bought it that way...lol!
Anyway, do you think I should just take the one shock and spring off and go with just the leaf springs?

Sounds like it may have had coil assisted shocks for towing at one time or another or they were called a helper spring. JC Whitney and others sold them in the late 70's early 80s.. It does have leaf springs on both side right ?? If not it is really fubared and you need to start from scratch.

Yep, it has leaf springs on both sides. Maybe I'll just go with the leaf spring set-up for now. I'm just trying to get it drivable for now.

Here ya go, They make or did make all the car/truck spring's for Ford Motor Co.

They made new front spring's for my 1961 Econoline pickup and where at my door one week from the day I called.
Click on more stuff in the header and read how to measure your springs etc.
Also click on What vehicles do we make products for? and find your car and click on ride ht. and you will see the price.

Put a set of regular shocks on it and drive it then. Those cars were leaf springs from the factory and it sounds like some aftermarket superwhammmy idea out of the 70's that someone tried on the car one time or another.
