I wouldn't leave it open, coolant would move too fast, and not have time to transfer heat out of the engine. Some just knock on the middle of the T-stat, you can get different size washers/restrictors from Moroso and others to slow the coolant down. IMO you need some kind of restrictor in there, just have to experiment with it.

What sort of pump are you going to run? Mechanical? Or electric?

With electric 1/2" to 3/4" diameter hole restrictor works great. Just want to build a little surface pressure in the block to get the water to contact head areas and not flash to steam.

Electric pumps work great to facilitate cooling in pits between rounds. Hook bat charger up to car and run pump(s) and electric fan(s) and viola, consistency..... Also works for the other side of the coin, we get down to some damn cold desert morning late rounds, and a couple 1000 watt bottle heaters across a radiator tank, and viola, you can bring an engine up to temp a whole lot faster and cheaper than 116 octain gas washing through it.
